Cheers to our 2021 Estate Cabernet Franc, an elegant wine carefully made in the semi-carbonic maceration method.
How did we do it? We started by placing whole clusters of grapes in a closed tank, leaving a bit of oxygen at the top. The oxygen helped yeast to form and ferment the released juices. The by-product of the fermentation was CO2, which forced the grapes that were still in-tact to begin to ferment inside of themselves. They eventually split open, where fermentation off-skin continued.
This method resulted in a beautiful, feminine, light-bodied wine low in acidity and tannins. It’s lively, refreshing, and fruit-forward without being overly tart. You’ll notice almost candy-like flavors of raspberry, strawberry, banana, and red Twizzlers with a soft finish.
Tease your palate with the zip and pop of this fun, flirty, Beaujolais-style wine that we affectionately call “Boujee.” Because the grapes are harvested by hand, and the winemaking process is so meticulous, we make this wine in small production.
